Applesauce Muffins

Weekend baking in November is always the first marker of the holidays for me. It also reminds me of my late mother and my late mother-in-law. They both requested baked goods like these from me often, made to be lighter and less sweet than store-bought.

I love this simple recipe using pancake mix and applesauce because the entire apartment smells like baked apples and cinnamon when they bake.



Applesauce Muffins (makes 12)

115 calories | 5g protein, 3.5g fat, 16g carb 1️⃣ Preheat oven to 350F.

2️⃣ Combine 2 cups of Kodiak Pancake + Waffle mix, 1/4 cup of light brown sugar, and 1tsp cinnamon.

3️⃣ To the dry mixture, add 1 egg, 3/4 cup unsweetened applesauce, 1/3 cup milk of choice, and 2tbsp melted coconut oil; mix until smooth.

4️⃣ Fill a lined muffin tin with the batter; bake for 13 min. (

5️⃣ Take out of the oven, spray tops of muffins lightly with a coconut oil spray and lightly sprinkle raw sugar on top. Broil on low for 3-4 min, until the sugar is bubbling and tops lightly browned.

6️⃣ Serve warm with dollops of applesauce or apple butter or a drizzle of honey after letting them cool on a baking rack.
